THIS WAY GARI COMES

With the first of the mamouth cassava harvested, it's time for the first four stages of turning this nutrious tuber into much-prized gari.

Hope team Mile Six begin the hard work peeling and washing the first of the cassava harvest while Hope Sakumas first class cassava grater’s cleaned and oiled after its journey from Sanda Magbolontor and ready for duty!

And a productive day our grater spends with team Mile Six cleanly peeling and then reducing the first huge pile of huge cassava to uniform gari chips

Then the cassava flakes are poured into nets for three days of soaking and fermenting before the final stages of drying and parching.

TThis nutritious drought-resistant crop is helping rural communities in Sierra Leone adapt to climate change and the dangers of more intense dry seasons.
